Zzzzzzzzzzzzzz and cake

I always have great difficulty keeping awake in July. It's not all that hot at the moment, and there has been rain, so everything this morning was dewy and cool, and the valley was full of mist. And yet I would very much like to curl up and go to sleep for about a week. I had to give up on Friday and just go back to bed because I couldn't keep my eyes open.

But today, among other things, I have made a cake. I think it's a little bit rich : too many eggs and butter. It's a traditional Victoria Sponge, and I now recall that I tend to find Victoria Sponge a bit too much. But a small slice is pretty good.

Caaaaake! You can take your small slice and give me the rest, Victoria sponge is my favourite type of cake ever, and I can gorge myself until I'm sick on the stuff. Yours came out very pretty-looking too - the wife still likes to bring up that one time, 4 years ago when I made a spectacular misjudgement about tin sizes and rising, and made two delicious giant Victoria biscuits.

LOL, I have been there, that reminds me of a certain angel cake where I swear the recipe said 'beat' where it should have said 'whisk'. It was a giant biscuit!

That cake looks absolutely delicious.

I think I understand your difficulty in staying awake. I have the same problem, only in January. It's impressive you managed to bake when you were feeling so somnolent.

It's even better now - I worked out that what it needed to take the edge off the richness was rather more smushed raspberries in the middle. Mmmm!

That looks splendid. I wish my sponges would rise like that, but my sandwich cakes always turn out more like sandwiches...

I have SO been there with the flat cakes... what I did with this one was add an extra teaspoon of baking powder on top of the self raising. It seems to work and you can't taste it!

I was still quite chuffed this one came out so fluffy-looking.

I've got a recipe for sponge cakes which is much lighter- uses half the amount of butter. Do you want it?

Oh - yes please!

This one turned out to be less impossibly rich once I added liberal amounts of smushed raspberries to give it a bit of sharpness but a lighter recipe would be good to try.
