Caught a new sourdough. Made a bread with it. Look at the even-ness of that crumb! I am proud.

Just with flour and water in a jar, nothing complicated, though I did use organic spelt flour this time, not sure if that made a difference but the yeast mother seemed to bubble up super quickly this time.
